- Even though the Turkey is the centerpiece of a Thanksgiving meal, we all know most of us are more interesting in piling on the sides. Turkey is very lean and as a result, typically cooked to a point of unbearable dryness. Now, it's near impossible to get a dripping most turkey on a smoker, however, there are ways to make it not terrible and to add amazing flavor. In this video, I walk you through how I smoke my turkey every year for Thanksgiving. I will admit, it came out a little darker than usual (of course, because I filmed it), but the flavors were just as good as usual!

I just got an offset smoker about a week ago. Have been watching more videos on smoking than I care to admit. Haven't used it yet, probably because I'm scared to muck something up. Came across your channel and thought "this guy really looks like he knows what he's doing.... Then I watched your first brisket smoke.... Now I'm not scared anymore 🤣

I'm glad that video actually calmed your nerves, as I was the same exact way. I mean, I probably shouldn't have done a brisket as my first cook but, it is what it is! I made that video for that exact purpose, as I wanted to show people my first smoking experience. It took some practice but now, cooking a brisket is as easy as driving a car! Turkey looks absolutely amazing!! Nice job buddy. Why the move?! I always wish I lived in the south but man I would miss winter and the seasons changing. It's currently 17 degrees here, such a love hate thing.
Thanks! Tasted just as good! Nothing is official, but I need a change. Been in CT my whole life and it's just not the place for me anymore. I'm personally not a fan of the winter. I wouldn't mind it as much if it were just 2 or 3 months of hell, but when it stretches to 8 months of cold, I can't take it. I think last year I wore shorts for the first time in mid May, and it wasn't even like we had snow much, it was just cold. However, I will say I don't think I could move somewhere with literally no seasons. I'd go crazy!

I was told to place a pan under the meat, whatever you're cooking and fill it with water. So, the steam would keep the meat moist. After watching several videos, I have not seen anyone do this, just wondered what you thought. The wife got a turkey for Thanksgiving, and I thought I would try and smoke it. Never tried this before. I went out and got a temp meter and an injector. Got some wood and some apple wood chucks. Ready to go and it rained all day and looks like it is going to rain tomorrow.
Are you using this on an offset or a kettle? If on a kettle, I would try it. If on an offset, I use a water pan near the firebox for everything. Keep in mind the moisture will be from not only not drying it out, but from the fat content, which is why you'd inject since turkey is so damn lean. The weather here is crap too, so I feel your pain. 😥

Do you find it harder to keep the temps up during the colder months? and vise versa in the summer?
Well it’s a bit tougher in the winter if you have thin steel. Summer is a piece of cake. However, if it’s windy, it’s just terrible. Doesn’t matter when it is. It wasn’t as bad with this smoker but with my brazos, due to the thin splits, my fire would literally just go out or the door would fling open. Unreal.
As far as the direction of your house an the wind just turn your smoker in the opposite direction 🤔
@@carolinatarheel4645 Problem is I like the lighting for videos where it is and I can stay warm in my garage while watching the fire.

I'm new to this stick burning game and i'd like to find a good reliable source of fuel for my offset smoker.
@@NuarStanger So I initially ordered from Eric's tree service in Columbia. Not very close to you, but I know they basically deliver everywhere in CT. They gave me a mix of maple, oak and hickory, which I separated out. Their prices are extremely cheap compared to everyone else I found and the wood is the same quality. I also got some from a friend who was clearing a lot. Dan from patriot pits lives close to you, so I can ask him where he gets his wood but I also have a good friend in Somers that processes hardwood now that would probably deliver out there.
Use some alluminum foil and drap over bird once it hits golden brown and it wont burn like that
I wouldn't say it burned, but that's a good tip!
Low and slow is the best method, You should have kept it at 275 -300 for the entire cook.
I’ve done it this way many times and it always has worked. Just adds a nice crisp to the skin for that last 30 min to an hour.

For what it's worth. It is safe to brine a store bought bird. I've done several and they are not over salted at all. I'm scanning for ideas and came across your channel. I picked up a 19.75 lb bird and can't decide to smoke, Spatchcock smoke, Fry, or the only thing I have not done to date it Smoke/Fry. Decisions decisions.
Good to know. I've heard different things from other people. Honestly I think it may be pretty tough to make a turkey taste more terrible than it already is😂 I've had my fair share of fried and I prefer it smoked. However, I've never had spatchcocked smoked. Maybe I'll do that for next years video!

I've been listening to a lot of guys buy on u tube a "Butter Ball Turkey " because it's brined already and they don't have to brine it. This is definitely not true. If you buy a Butter Ball Turkey please go ahead and brine it with your home made brine recipe and add you'll have a much better tasting moist Turkey that everyone will be eating for days.
Good point. I've tried it since then and brined it and I agree.
The breast was done before you bumped the temp up so i can imagine it was dry. That's the bad thing about a big turkey.
That and I stuffed it with...stuff. I don't think that helped.
