Famous Hyderabadi Biryani - Kachay Gosht Ki Biryani (Detailed) - Kun Foods

  • Aslam Alaikum. In the above video, I have shown a detailed procedure of making kachy gosht ki Hyderabadi biryani. At the end of the video, you will be able to make perfect Hyderabadi biryani with original taste. Hyderabadi biryani is one of the most famous biryanis in the world. You can also find one kg recipe below.
    One Kg Rice Recipe:
    For Marination
    Chicken 1 kg
    Lemon Juice 2-3 tbs
    Salt- 1.25 tbs
    Red Chilli- 0.75 tbs
    Green Chilli Paste- 0.75 tbs
    Ginger Garlic Paste- 1.5tbs
    Cumin Powder- 0.5tbs
    Corriander Powder- 0.75tbs
    Fresh Corriander and mint- Handfull
    Fried Onion- Handful
    Curd-200gms
    Green Cardamom Powder- 0.25tbs
    Whole Spices- 1tbs
    Ground Whole Spices- 0.25tbs
    Oil- 200ml
    For Rice Boiling:
    Whole Spices-1tbs
    Oil-100ml
    Salt-3tbs
    Bay Leaves- 1
    Mix Marination Ingredients and Marinate for 4 hours. Boil Rice 50% and make a layer on chicken and keep boiling the rice and make a layer again when rice is 75% cooked and lastly make a layer of 100% cooked rice and cover with cloth and weight. Cook for 25 minutes on high flame. Enjoy your Biryani.

    Masala mixture was good
    There are few suggestion for the perfect dum
    1. Do not add any water to the masala (if you could see your bottom layer of rice got soft coz of water added. Instead you can add saffron soaked milk at the end which will give color and saffron flavour to your rice and will not let your masala get burn.
    2. Pour pure Buffalo Or cow ghee before you seal the lid which is must in hyderabadi biryani
    3. Replace zeera with Shahzeera ( zeera is never used in hyd bir)

    I am a hyderabadi and i know how hyderabadi biryani is made. We have been brought up eating it almost every week .. and i can say u have executed the recipe very well . Authentic hyderabadi way . But no kewra essence is used in hyd biryani and last thing added is saffron milk the yellow colour is from that .👍

      Afzaal bhai have used v lil oil dat too just during marination.....srf otne oil se dedh kilo biryani,?dum pr bhi yaqni pr aur oper chawlon pr b bacha hua thora oil aur asli ghee thora sa daala jata hai...asli ghee na b dalen to piyaz wala oil to zarori hai vrna 4,5 spoon oil se kia hoga?

    This could've been more flavorful if you would have added kewra water and desi ghee....but anyway nice explanation and recipe. One tip/trick from my side, while boiling the rice just add ginger garlic paste, coriander and mint into it and feel the great flavorful rice...I'm not a professional but preparing a biryani recipe in home since 6-7 years. Finally gained knowledge of fine tuning of spices..

    1. Dont fry onion too much otherwise it ruin the taste, just little brown the onion
    2. Dont add kewra that is lucknawi biryani style,
    3. Add shahzeera instead of zeera, zeera is never used in Hyderabadi biryani
    4. Add 1 cup saffron soaked milk on rice before dum
    5. Pour pure Buffalo Or cow ghee before you seal the lid which is must in Hyderabadi biryani
    6. dont open lid immediately after dum leave for 15-20 min

    Assalamualaikum. I am from Hyderabad India, please don't mind your recipe is wrong, I am also a Chef. Let me explain you how to cook Hyderabadi Biryani. In Hyderabadi Biryani we never use coriander powder and cumin powder. In garam masala we don't use black pepper either, the most important ingredients are good quality of mutton or chicken good quality of basmati rice, and most important is pure ghee, and saffron without these Biryani can't be made good , and we don't use whole garam masala in marination only powdered masala, process of your making is ok don't use black cardamom in boiling water and the last don't use kewra water also as it will suppress the taste of Biryani. I like your recipes.

    You missed saffron (zaafraan), malai, khoya as a part of marination. In every biryani we make in Hyderabad Deccan we add saffron boiled in milk. Half is added in marination and half on top of the rice. We also add malai, khoya and grounded green chilies in marination. Try it out . You’ll love it. It significantly increases the taste. Also, avoid kevda 😀

    A tip I have is to make the marinade (without the oil) before adding chicken to it. Taste the marinade then. Raw chicken has dangerous bacteria like Salmonella so be careful.

      so you can wash chicken with vinegar ....all the bacteria would die...

      @@zainabriyaz2932 Bacteria is not just on the outside of the chicken meat which can be easily washed away with vinegar. This is why we cook it to 165F/74C
