BTW, for next time, just leave your bechamel cook a bit longer, it will thicken as it comes to a boil - you will not need to add extra flour during the cooking. You mix the flour with the butter and cook until it smells a bit nutty, that is to get the raw taste of the flour out, when adding in more, it is not cooked and will also cause your lumps. Believe in your recipe and yourself, you did good!

Yum!! I’ll be right over! I’ll bring the Prosecco! I like to use Penne Rigate for all of my baked pasta dishes. My Southern Italian family also loves Greek Pastitsio! The béchamel sauce is what makes it special. The best in lasagna too! This really brightened my day, Lia!!

Lia.... I grew up on our family farm, now I own it. You never put fresh tomatoes in the fridge. You are exactly right, we grow them and they stay the outside temperature. We typically only cut them the same day we use them maybe a day before. Your dish looks very good! I have never had it but I will try it. Thank you. MLLHR!

Lia, the first rule for a roux is to put all the flour at the first with whatever fat you're using.. You can't ever go back and add more flour because it lumps up like crazy and the flour tastes uncooked. If you need to thicken it, turn up the heat until it condenses. If that still doesn't work, add a pinch of corn starch. It looks wonderful though! Well done.

I’ve been crazy about watching ALL THE AMAZING UK Morrison’s grocery hauls...wishing we did this in the US. For L30 plus 5 for delivery, you get so much. WE LOVE GROCERY HAUL SAVINGS & PRICES in the US.
Everyone's oven has a hotter side. Rotate the casserole halfway thru cooking time. Thanks for the tip on letting the onions, etc. sit in the vinaigrette !
You can usually just place the pasta angled into the water, as it cooks the end in water will soften and you can slide the rest in. Would give you long noodles to line up in the baking dish. The jumbled noodles take more space up than aligned ones will. Looks like a delicious dish, will have to try sometime.

I made this today and it was absolutely delicious!! Thanks for the video and the excellent recipe, although I put a sprinkling of chilli flakes on top for a little kick and you can never go wrong with a greek salad, my absolute favourite. I might make it with a tomato sauce next time and see what that's like compared to regular lasagne.

@cinland The best solution would have been to combine the flour and the milk and then incorporate both. Starches are great thickeners, but they’re sensitive to heat; so, it’s best to raise their temperatures gradually. Adding them directly to a heated mixture is what causes them to rapidly glutenize and cause lumps. I grew up cooking with a mother who was a starch chemist for the US Dept of Agriculture.
Lia did it the right way until adding later which could have been a disaster. Corn starch should be added to cold liquid and dissolves much easier in cold liquid. I would never use flour in that way (dissolving in cold liquid) as it is much more prone to form lumps. A roux is flour and fat - that works

When I got to the window the person who handed me my order heard you talking on your video and said “Lia!” I hadn’t met anyone in my area watches you. So that was fun.

Tomatoes should be stored at room temperature, that's how we do it in Italy. The texture becomes mealy if stored in the fridge.

When using or adding flour, it should be dissolved in cold liquids first and then heated up. Otherwise, the flour will glutenize and lump.
