I worked part time during high school from 75 to 77 and McD jad at that time just 1/2 slice of American cheese. Kitchen crew had to cut the pack of cheese into half slices. The franchise owner who invented the filet o fish only used half a cheese slice so as to not overpower the fish taste.

Speaking for me personally, it's Wendy's (panko hits), Popeyes (spice is nice), and McDonald's (nostalgia factor). Arbys missed the mark with the flavors, but you said it and rings true...always depends on who's in the lab making and preparing it but always appreciate the content.. Keep doing what you do 🙌
i'm not thrilled with the sweetness of the bun on the Arbys fish. To me, those flavors don't go together. i think i'll ask for a regular bun if i get another.
I like that the Wendy's is wild caught & they give you enough lettuce, pickles, mayo, & cheese. You never know where the fish came from with the other sandwiches, but that Arby's one looks bangin. I like that they use Hawaiian bread too. Hmm..ok I may need to try both. 😊

I worked at McDonald's 1978-79. It always had the half slice "landing strip" of cheese and the steamed bun to go along with the same cod rectangle and tarter sauce.

Back in NYC when I worked in Manhattan there was a deli on 45th that used to have fried fish a couple times a week I get a fried fish on a hero with lettuce tomato and tartar...man was that good. Cranberry was the deli...

McDonald's started selling fish sandwiches in the '70s for practicing Catholics who didn't eat meat on Fridays. That's why people have Friday fish frys.

You have to try Dairy Queen's fish sandwich. It's not a seasonal item. Sometimes, it's not even on the menu board, but as best as I can tell, every DQ has it. It's the best thing DQ sells, even better than ice cream. It's in a boring bun and barely anything on it, but it's an amazing cut of fish. If you went into a sit down restaurant and got that piece of fish with a choice of sides, it would be a great dinner. It's a hidden gem. Everybody should try that DQ fish sandwich.
Arby's uses a King's Hawaiian bun-- hence the name and the sweetness you were talking about!
