Cater a wedding with me - Part 3

Technically this is the day of the wedding. Another thing about being a baker is getting used to working late nights or super early mornings. I've learned I much prefer to start late at night then work into the early morning like 3am, instead of waking up at 3am. I've also learned to schedule myself 3-4 hours ahead of what I anticipate my timings to be to leave room for any delays. This also mean when I finish on time, get to take a nap before heading out. Naps are life when it comes to events for me. Usually, I get no more than 5 hours at a time so any short naps I can sneak are a win.

As someone is passionate about conservation and human rights, using sustainable ingredients is important to me. Fair trade ensures that farmers are paid living wages while also promoting environmentally friendly farming practices. Not many people know, but it is very common in the chocolate industry to use forced child labor to pick and sort the crop. Children looking to make some money end up thousands of miles away (often in a different country) working on a plantation where they are paid very little, if at all. In the early 2000's, the largest corporations in the chocolate industry agreed that child slaves would not be used or tolerated, yet child slavery still exists and is just ignored. In fact, Nestle was just in court due to child slave labor, but was not held accountable for these crimes as they didn't happen on US soil.
Baking with sustainable ingredients is near and dear to my heart. I'm not perfect, but slowly I am taking steps in the right direction to share this message and end farmer exploitation. If you too want to join the fight, below are some links to get you started.
