I totally missed the whole demo on the puff pastry cuz his "Pepperidge Parms" joke had me laughing so hard I couldn't pay attention. Funny Chef John. FYI, you could have simply docked the middle of the dough before baking it. That would eliminate the center cutting step. Docking is essentially poking the pastry with a fork to ensure it does not puff. You will end up with a perfect little puff pastry cup.
I can't believe Chef John basically just told us how to use Puff Pastry and still he is able to make such an awesome and "delicious" video ;D I'm totally gonna make them on my birthday before school as little treats since they don't take too much time to make :D
