    These videos are good for Americans to watch. My Ukrainian wife makes this the same way. People in her major city don't have expensive food processors. They chop everything by hand. Mix everything by hand. And squeeze everything by hand. Thanks for sharing!

    I too make kraut every year. I use 1tbsp. salt per 5 pounds of cabbage.... that's a little over 2 kilos. Less salt than that & I've ended up with slimey cabbage, in other words .....garbage. Also, I've never worried about squeezing the kraut. The bottom of a beer bottle works fine for getting the juice out after you've added the salt. Try Kim Chee sometime. same procedure but with some Asian ingredients added.

    Sauer Kraut! It's on the jar. Cabbage is healthy. It's good for you. Koreans call it Kimchi.

      Different spices and veg blend, but exact same principle. its called lacto-fermentation. its very reliable food preservation method used for thousands of years.

    Tip for any one wanting to make sour cabbage, for the first time, do not use iodized salt. Use only salt with no additives.

    Good to see your wife on the channel, Lars. She seems to be getting more comfortable with the camera. When I was a teen, we made fermented cabbage in a 12 gallon crock with a large cabbage shredder that spanned the crock. It was a layer of cabbage, a small handful of salt, and then stomping down the cabbage with a large wooden mallet. Cover with a large, heavy ceramic disk. Cover the crock with plastic wrap, and let it work off in the cold garage for 2 weeks. It was wonderful.

    I can remember, when i was a child, my Grandparents also made their own Sour Kraut from Cabbage out of their Kitchengarden. They lend a huge Cabbage-grater from Neighbors. That had the dimensions of a Eatingtable! The grated Cabbage was collected in a big Bag of Cotton, whitch was mounted underneath the Grater. The Sour Kraut was fermenting and storaged in big and heavy duty clay Pots in the Cold and dark Cellar. This Pots hadcs capacity of surly 10 liters each. Mostly my Grandparents filled four to six of this Pots a Year! The Kraut was so awesome!

      10 liters is small, those clay pots were made in sizes 80-120 or more liters. Sadly though most of these were converted to flower pots :( and new ones are not made as far as i know.

    My mother and grandmother used to make Sauerkraut all the time, one of those things I should attempt some day…. but then my brother is a bigger fan of it, sounded like he was going to attempt making a batch of it, so I might just leave the Sauerkraut making to him. 🤔😂

    I make about 10 gallons (40 liters) of cabbage each year. A 2% salt proportion by weight is recommended; 100 grams of cabbage takes 2 grams of salt. I use a German style fermentation crock with a water lid seal. When the fermentation is finished I transfer the fermented cabbage in 4 liter wide mouth jars with lids and keep them in my refrigerator. My cabbage will easily last a year. I have a small jar of 3 year old cabbage that is still good but very tart and soft.

    Your wife speaks English remarkably well. This dish seems very much like German sauerkraut, but I think the Germans also put some additional spices in it at times. My wife is Vietnamese, and often makes pickled vegetables that are similar to this, and like you say, all of these things taste good, keep well, and have a lot of the healthy kind of bacteria that is great for your stomach health and digestion. Thanks for sharing this method with us, and perhaps you can share more of them with us when you have the time! 😋

    I make Fermented cabbage here in Iowa. I like the idea of carrots. Also a little horse radish if if you can grow it in Russia is good also. Shredded in the Cabbage

    its so crazy because today I took Ksenia to eat and we ate basically traditional Mexican food that even the Aztecs cooked and its delicious. Like guacamole was made by the Aztecs and we ate beans and tortillas and yea its thousands of years old too. It's so different than this style of food obviously because of the ingredients at hand in that land.

    I love homemade sauerkraut. My grandmother also used to do sour cabbage heads. Those leaves make the best cabbage rolls!!

    You can take a whole cabbage, core out the bottom about 1 inch or deeper and fill with salt. Cover the hole with a piece of cabbage that you cut out eairler. Place head of cabbage (core side up) in a plastic or ceramic container and fill with warm water keep in a cool place. Make sure the cabbage is below water and cover loosely and wait a few months.

    Mrs Survival Russia (best married name ever💕) when I ferment cabbage to make sauerkraut I follow a tip my friend gave me….you don’t actually have to spend the time to bruise the cabbage and carrots with the salt😳🤩 Mix the cabbage and carrots with salt, pack it in the jars (or in your case a pot) put the weight on and it does all the work it’s self😎😎🎉

    we used to make Sauerkraut every year, now only every 2-3 years, since demand is no longer that big.
    But when we make it we fill 80-100+ liter clay pots :) once it is done fermenting it gets frozen raw, as is.
    We don't put in carrots, but before we cut the cabbage we remove the stump? (the hard strong tasting inner part) and put in onions. After cutting and when putting it into the clay pot we layer it like this: cabbage then some salt with whole pepper corns and bay leaves then the next layer of cabbage, then some pounding with a 50+ year old homemade wooden masher to extract the liquids.
    The taste is amazing, no store bought Sauerkraut can compete with it. I am always disappointed with store bought one, having grown up with ours.

    In my family we do not make fermented (sour) cabbage because commercially made sour cabbage in Poland is readily available all year long, cheap, good and tasty. On the other hand commercial sour cucumbers are awful for some mysterious reason (I cannot wrap my head around why the industry is so inept in cucumbers but so good in cabbage) so we make super tasty home made ones. They're so good that when the jar is empty I use to drink the "cucumber water" (brine) they were in. Very refreshing - some say it's a perfect cure for hangover. Some households make cabbage anyway, often in large clay pots the size of a barrel. Sometimes local fresh food markets even sell cabbage already machine-cut, for that very purpose: you select a bunch of nice, fresh cabbages and they put it through the machine and then in a plastic bag to take home, so you may skip the very laborious (and a little dangerous for your fingertips) cutting. Some families also make fermented beetroots and other stuff. Lars had shown babushka making fermented mushrooms on this channel. Generally fermented whatever is a very Slavic thing.
    I remember reading a novel by Strugatski brothers (can't remember which one) in which village folks were making fermented almost everything... I laughed at that.

    2% table salt is the rule for anything for food. 1.8% for fry/bake/roast and 2.2% for smoked goodies.

    Very, very similar to how I make sauerkraut. I like best some sliced apples and sliced onions with my cabbage, but you can put a lot of different vegetables and herbs and spices in too. Beets are nice and caraway is always good. I like about 2% salt by weight of vegetables.

    The key here is to not oversqueze the cabbage as it will become mushy, and not to undersquezze it so that the juice come out and the sauerkraut does not become bitter.
    My family recipe is different from this one as we keep it in a room temperature for three days and on the second day we take out the weight that presses onto the cabbage, poke the cabbage and then mix it up once more and put the weight back on the cabbage.
    Realtively simple recipe that has only 3 ingridients.
    But wait there's more. You can make stewed cabbage with it. You mix 50/50 sauerkraut with fresh cabbage, add tomato paste, bacon, sausage

    That is the best! I miss being in Russia just for some of the foods, especially the sauerkraut! The pickled garlic is amazing too

    Good video , yes I started following you not long after you started uploading to RUclips. I do love the wild camping things but it’s good how you have been doing more videos on the homestead , but show more of the building of your new house please .. it’s good also how you have been bringing your wife into the channel now , her more traditional Russian background is very interesting to learn . If I could ask for something it would be for longer videos . Anyway keep up the good work Lars , I always look forward to your next video 😊👍

    Fermented foods have naturally high levels of Vitamin K which helps clean out calcium from your arteries. I love polish sausage with sauerkraut and enjoy stinking up the house during thee winter.
