500 g tiger prawn, peeled and deveined
50 g pork paste, optional
20 g spring onion, white part minced, green part choppped
1 tbsp fish sauce
salt, sugar, pepper, stock powder to taste
sugarcane, split into thin sticks
crushed roasted peanuts
scallion oil
fresh greens: lettuce, corriander, mint, cucumber

you can steam for 5 mins and then grill. It's less fat that way

hello, Im a chef and have been to Viet Nam. I love your videos, keep up the great work.
I have a question. I have been trying to find/re-create the little potstickers known as The White Rose of Hoi An. Do you know about these? Apparently they are only made by one family in Hoi An, yet every hotel and cafe had them. There were un-dirty word-beliveable. Just truly outstanding. If you could get that recipe (or anything like it) it would be a real coup :)
If the recipe of White Rose could be shared, there would be no reason why only one family in Hoi An could make it ^^

Is pork paste the same as minced pork?
No, pork paste is processed a lot more into a sticky consistency. The meat used has to be freshly slaughtered

The real Chao Tom (Vietnamese shrimp sausage) does not have pork paste mixing with the shrimp paste. The flavor of Chao Tom whose the shrimp paste is mixed with pork will be quite different from the authentic Chao Tom.

You can buy it in the supermarket or meat store :)

You can buy ground pork and blend it in a food processor till it's super fine, mix that with the shrimp paste and season

Yes, you can skip the peanut. It's optional which helps to create crunchy for the food. You can use cashew nuts instead, but crush them first :)

The peanuts are really for texture the main flavor is going to be in the chao tom and nuoc mum. Try the scallion oil and fried shallots instead if you can't do any nuts.
