Very nice and well thought out build, love the Aethos traditional shape. Since you asked I'll offer a cockpit change to save over 100g. Easton EC90 or E100 handlebar will weight between 205g and 178g for 42, your preferred 40cm would be even lighter and an Extralight 120mm Hyperstem is just 87g, while the Enve is 133g. That means you could save more than 134g! Then a Tune seatpost would net you another 50-100g saving before the Darimos become available.
Great to see a Garmin mounted on the stem, old school like. BUT, you've missed a trick: I've discovered that you can fix it to the stem with just one band, not two, saving even more weight! 😂🤣😂

Disc brakes seem not just redundant but totally counter productive. Spend thousands saving a few hundred grams in the frame only to pile on 500 grams extra for disc brakes that aren’t even going to get used. It’s not very, erm, logical!

Awesome build, aethos is a dream bike for me still! Def can save some weight on the bar and stem combo and spend less money than enve though!

Should have run 28mm on both wheels. If its good enough for optimizing TDF mountain stages its good enough for an amateur hill climbs.
Optimal for them isn't optimal for everyone.

Scandium alloy rotors . I have some custom made ones
But an Aethos is a fantastic frame to ride around all year, then strip down for the hill climb season.
The saddle isn't that comfortable to most people .
