Maybe it was because I used self rising flour instead of all purpose flour + leavening agents in the proportion your recipe states. It was a hit anyway, and delicious, but very odd for "scratch" cake, as it was light and bouncy as a pre-mix boxed chocolate cake.
That looks really good. If I wanted to ice the sides of the cake, do you recommend doubling the icing recipe? Or would that be too much icing? It's okay if there's leftover icing. My, uh, kids will eat it. Is there a reason you prefer not to ice the sides?

I think you could use that and just omit the other leavening (the baking powder/soda)
You can use honey in the icing or just a bit more orange juice.
What's maple butter? I haven't heard of that. Sounds good!

You can use sugar beets instead of carrots....If you compare the two after, it's hard to tell the difference...
