Don't throw away the leaves and stem of the taro. You can cook it for your pigs' food like you do with the banana trunks. It is much nutritious for the pigs.
You might try using a mandoline to slice your potatoes. It's a metal sheet with a blade in the middle and so run the potato across it and it slices them to whatever depth you set. I also use a "mincer" where you just add pieces of pork and you just turn a handle to mince the meat into the size you set with the blades that come with it. My mother used this many years ago.
