I just made this tonight and it was delicious. I also added some carrots and cauliflower into the mix to use them up. I also swapped the mint to coriander (cilantro for any Americans reading) since I was lacking mint but had a large bunch of coriander and it was amazing. I thin this would also work well with basil, chives, dill or a mix of any of them. Fast and easy but tastes fancy!

Omg I haven't had lemon sole since I was a kid. My dad was a fishmonger in Ardglass, County Down and used to bring home lemon sole, herring, whiting, smoked haddock, hake all the time. Great times. I need to have lemon sole again
