I've been here in Pattaya for two months and, as a diabetic, one of the things I've found is trying to get a full meal without rice or noodles, both of which causes blood sugar to spike. The Thais seem almost surprised when I reject their offer of rice or noodles when all I've ordered is vegetables as a side dish, when I can find it. I've eaten here in Central Pattaya mall's food court as the food is very reasonably priced, I think. Problem is it seems all of the food stalls are serving the exact same thing.
Language skills just may not be your cup of tea Paul. The last time I was in Thailand was 20 years ago and I learned quite a bit of it, but have forgotten most of it. Next time I go, will be back to the grind 🙏, maybe this year in August
I think you can tell them "Can you speak Thai, Phom yahk feuk pasa Thai" it means "I want to practice Thai" or "An nee pasa Thai riak wa arai" means “What is this called in Thai“

I've heard that you can order "no khao" which means no rice
