Because the fish had already been pre-dried in the oven. Drying them under the sun is to get them thoroughly dried for storage. The duration the fish stays under the sun depends on the intensity of the sun where you reside

Do you leave it outside for the rest of the drying time or do you only leave it in the sun during the day and place it elsewhere at night? Love your videos!

As per the fish, I usually bring them outside during the day and dry them under the sun. I take them back inside once the sun goes down. But before taking them inside the house, I place them inside a container with a tight cover to prevent fishy smells from overpowering my house. lol

Kosher salt is a type of sea salt and different from iodized salt. But any salt can be used actually. Thanks for your compliments
