    Pesto Pasta - 25g protein per serving
    Ingredients:
    4oz chickpea pasta
    1 cup fresh basil leaves
    1/2 cup fresh spinach
    1 clove garlic
    2 tbsp shredded Parmesan cheese
    2 tbsp pine nuts (or walnuts)
    2 tbsp olive oil
    1 tbsp lemon juice
    Salt and pepper to taste
    8oz grilled chicken or tofu
    Extra pine nuts and Parmesan (optional garnish)
    Instructions:
    Bring a pot of salted water to a boil.
    Cook the chickpea pasta according to package instructions.
    Drain and set aside.
    In a food processor, combine the basil, spinach, garlic, Parmesan, salt, pepper, and pine nuts.
    Pulse to combine.
    Blend in the olive oil and lemon juice until a smooth pesto forms.
    Toss the cooked pasta with the pesto.
    Add grilled chicken or tofu.
    Garnish with extra pine nuts and Parmesan if desired and serve immediately.
