  • We are going to be covering the topic of “Fire Management” in this video. We will be cooking on our Oklahoma Joe’s “Highland” offset smoker. This video cover a few tips that may help in understanding and making “Fire Management” easy.

    The happiest day of my life was getting rid of my off-sets.
    Both Brinkman + Oklahoma Joe.
    Too much bad smoke + temp swings.
    Ya get the fire just right but not for long.
    Heating splits + all is a ritual for me.
    I now have a Weber kettle 22 inch. as well as the rotisserie add on + i'm happy.
    I through away more costly meat than i care to remember.

      What’s up Pete! Hey bro I totally understand the frustration. I’ve been at this for a while. I made up my mind to get serious about barbecuing in the late 1990s. I did not have RUclips University at my fingertips. I learned from trial and error. I too had to chuck away some good meat but I stuck with it. I had a Weber and a big 5 burner gas grill in my arsenal at the time. I still do by the way, lol. I will confess, my Weber sees the most action. Stick with it my friend, sounds like you are. You are using what works best for you (the Weber!) I have some “Weber” videos that I need to post. Thank you for checking us out and hey, “Keep em’ burning!” 🔥

    I’ve got some nice charcoal smokers and like them a lot But I picked up this same smoker with a baffle and trying to learn fire management. I feel like a rookie again and this video has been about the best explanation I’ve seen yet! thanks!

    That is amazing how you can add two large splits to your firebox, barely crack the lid on the top of the stack, and it will hold the temperature for 1 hour. I have an OKJ Highland also but mine does not work that way at all. Mine would overheat very quickly, and barely cracking the lid on the stack would smother my fire and I would be dealing with plumes of white smoke (even while keeping the side door to the firebox wide open.). I have to use smaller pieces of wood and I feed the fire probably every 20 to 30 minutes with another stick. Temp swings between 230-260. This has been a great video to watch, thank you very much.

      That can be part of it. I will posting a couple videos that will help with temperature control. I also will be addressing cooker setup and various heat options.

    Amen brother. You are absolutely right. You don’t need the need expensive pits for good bbq.

    Do you prefer to use the basket or not? Which do you think gives better fire management? The basket or no basket?

    ? Do you worry about hot spots by adding tuning plates or do you just cook and let the smoker do what it do.👍💯

      With my setup, I let it go. I have up loaded a part 2. In that video I do cover in detail how I setup my cooker. Click on playlist, then click offset

      Oklahoma joes highland smoker love it for a so called cheap offset smoker

      No problem, more videos coming up. I meant no offense with regards to the “Highland” but it is $199.99 new out the door. Some of the other cookers being offered are $400.00 and up. Heck, it took me 2 years to pull the trigger on my 1150PS2 by Pit Boss. I got you, I will post more videos using the offset. I’m looking forward to the cooks.

    A my brother, I'm having a hard time deciding on the Oklahoma joes highland smoker or the old country pecos smoker. What's your opinion.

      What is up Kevin? Please pardon the delay but to answer your question I have a couple for you.
      First, what type of cooks do you plan on doing? (Brisket, Ribs, Chicken) What quantity will you be preparing? (Large or small family) Both cookers are nice but are two different sizes. The Pecos is the larger of the two. I always suggest that if you plan on doing a lot of cooking (large cooks, aka family get togethers or cooking for the big game, you want to make sure you have the right size cooker to handle the job.       @@getjimmysbbq I really just want to be able to fit 2 briskets on a smoker, I'm just cooking around the house for me, my wife and daughter but want to be able to have enough space on the smoker for maybe a cook out if having one. The pecos seems more constructed better, but I do feel if I get the Oklahoma joes highland for $299.00 that I would have shorten myself for not getting the pecos for $100.00 more dollars.

      Honestly both will work. The “joe” will allow two whole briskets but not much room to spare it may be a tight fit for anything over 12lbs. The “pecos” would give you some room to spare. It is a bigger cooker. Depending on the brisket size. Bro, go with the “pecos” I’m sure you won’t regret it.
