Chicken stock instead of water is how you make spanish rice, I believe (its how I make it, anyway). Im not sure how it affects the already coocked rice in fried rice, but in spanish rice, you hydrate the rice with chicken stock slowly while stirring. Best rice I know how to make.

@unzikarim2648 I don't exactly cook the rice *in* the broth, I toast the rice in butter, add the spices, and slowly add half a cup of chicken broth add a time until the rice hydrates. I'm not Spanish, btw, I just picked up the recipe from a friend's family. It's one of the two proper meals I can cook confidently.
