I can think of reasons on why they choose not to drink it, Little Girl being a kid would complain about the carbon dioxide bubbles that sting on your mouth, Martha and Helena would probably not like the taste of soda or even sodas in general even when matured.

And i don't think the hunters mains would like to see how their match is a bit harder just because Demi is playing as junko (think about a little girl healing with soda in the doll state while Junko kite with another one, that's hunter abuse-)
