I have not encountered that message before. My guess is either that phone is not a real working phone. It’s probably a demo phone that will only work in demo mode. Run a check the IMEI.

Update will be fine as well as future restores. Demo will only come back if demo firmware is flashed on the device.

Once the download has started it really doesn’t matter if it is connected until the download completes. But I usually just leave it connected.
