When he gives consent at the beginning of the form it then transfers the information from the IRS into the FAFSA. So he may not be presented the questions to walk through the line by line of his 1040. This is one of great new improvements with the new FAFSA form.
It may, but I haven't heard of this being a common technical issue. I would advise you to go back and review those personal circumstance questions to ensure you selected one which would deem you as independent and not require you to provide contributor information.

I entered it today, and they asked me to wait for three days! Did you have to wait for three days after entering your Social Security number?
It may be you were in the process to create a username/password (FSA ID), which is the PRE process to being able to log into studentaid.gov and start the FAFSA. Yes, it does take around 3 days for your social security number to be verified by the Social Security Administration. You are unable to provide consent on the FAFSA until your identity is verified. So it is encouraged to wait those three days so you don't have to redo your FAFSA later.

I am married to a non us citizen, and we're stuck at the verification of identity because they're asking for us documents that HE DOESNT HAVE, cause clearly he's not a us citizen. They're making this process really frustrating. He made an account and everything he just need to be verified, what should I do?
We understand your frustration, unfortunately you have to work directly with Federal Student Aid who are the only ones can can manually verify his identity. You will need to provide whatever documentation they are asking for. You will still have to include him on your FAFSA since he is your spouse.
Does a Roth IRA count towards assets?
No, anything in a formal retirement account does not count as an assets. Any type or IRS, 401, Pension, etc.
Does a joint account for checkings/CD need to be reported?
Yes it is. The checking will go in the first category in the "cash savings and checking". The CD will go in the second "investments" category.

Despite also being an independent student, my final page just says "sign", rather than "sign and submit". Would this be a technical issue?
