I think how you fish it depends on the water and/or how you wanna fish it. As far as what it imitates, I think the possibilities are endless. Just check around your favorite water and look for stuff you can match or generalize in a composite fly. Where I live and fish I can probably get ants, multiple beetles, smaller hoppers, crickets, bees/wasps, flies and moths/butterflies with different color combos.
