To have tender and soft meat, cut the brain and major nerves inorder to not give the nervous system a chance to command the production of that hormone. If you are going to unalive the creature before cooking it *DON'T* do what this guy does. What this is, is sloppy, crude, and one of the more inhumane ways I have seen a lobster cooked.
