So when it’s cooked, the meat is tougher and chewier because those stress hormones were released when it was boiled alive. To have tender and soft meat, cut the brain and major nerves inorder to not give the nervous system a chance to command the production of that hormone. If you are going to unalive the creature before cooking it *DON'T* do what this guy does. What this is, is sloppy, crude, and one of the more inhumane ways I have seen a lobster cooked.
