Shooting with a stick from the ground is so different from grabbing a ball and launching up into a hoop. That was great! Jmarts seemed the most natural and Pacer was so FUNNY!! This is definitely not authentic (I call it my YT peepole carnitas), but it SLAPS! Perfect for burritos, bowls, soup, quesadillas, nachos... **chef's kiss** 👩🍳💋👌 Copied straight from the cookbook/collection of family favorite dishes that I created and gave all my relatives for Christmas. "Pork Carnitas 4-6 lb bone-in pork shoulder 1 T. salt 1 t. black pepper 1 t. chili powder 1 t. oregano 1/2 t. cayenne pepper 1/2 t. cumin 4 cloves garlic 1/2 c. salsa 1 c. chicken stock 3/4 c. orange juice Juice of 1 lemon Juice of 2 limes Rinse pork roast, pat dry, and place in the slow cooker fat side up. Slice the garlic cloves in half and add to the slow cooker. Combine spices and rub all over the sides of the pork. Combine salsa, lemon juice, lime juice, orange juice, and chicken stock. Pour over the pork. Set the slow cooker to low and cook meat for 8-10 hours. When finished cooking, remove bone and large chunks of fat from the meat. Line a baking tray with foil, then thinly spread carnitas on top. Broil for 5-10 minutes to get crispy edges on the pork. *Please note: This can absolutely be done in the oven. I believe those cooked during the Callaway, GA vacation went for 6-8 hours at 275° covered in foil." The air fryer is my new favorite way to crisp/reheat the meat. I also always reserve some of the leftover juices from the carnitas to use in my: "Mexican-style Rice 3 T. vegetable oil 1 c. uncooked long-grain rice 1 t. garlic salt 1/2 t. ground cumin 1/4 c. chopped onion 1/2 c. tomato sauce 2 c. chicken broth (I use drippings from the pork carnitas) Heat oil in large saucepan over medium heat and add rice.
