Usually, rice and potato (or other starchy things) need a special kind of yeast to break down the starch into sugar and ferment it - look up koji. But you can use a pressure cooker to break those tough boys down, and then ordinary yeast can be used. Even better, some nations have drinks fermented by the spit of the elders (saliva contains amylase that breaks down starch). So here's an excellent idea Elira alcohol starter pack: --package A: spit of the dragon - add the contents to slightly warm steamed rice. Stir it occasionally for 4 days. --package B: yeast of the dragon - add the contents to the pre-fermented mixture. Stir it daily and decant the formed dragon juice. Distill it if needed.
