Just found your video and am about to can some Rhubarb. Done pickles and Jam and dry canned some oats too. Just a note about harvesting the Rhubarb, for the plant's health its better that you twist and pull from the very bottom of the stem rather than cut it as leaving some of the stalk on the plant can cause disease. Love rhubarb. When used to have them would use in sauce for chicken and rice dish. Pour over chicken. Also over zucchini bread. Pie filling of course. On cheesecake. In muffins or popovers.
@@Jane_1776 it's actually same for rhubarb pie filling that's been home canned. Rhubarb, sweetener of your choice, simmer until thickens. Taste test as go. It will sweeten more as the sauce thickens. But first it's very runny.
I don't can rhubarb, or like it :/ But... I will be canning this year! You inspire me each time I watch these videos. I want to can tomatoes from my garden and maybe pickles. I have one Boston Pickling plant growing in my tiny garden now. Thanks for all the encouragement!
So far my girls and I have been making jellies from natural plants we can forage such as violets dandelions lilacs clover we've been learning to find and use wild plants we canned beans tomatoes squash zucchini peas last summer looking forward to better harvest this year trying new gardening tricks with no fertilizers and only our own compost thanks for tips on rhubarb

Not sure where you are located, but I am in Michigan. Here's a secret: rhubarb is not a "Springtime only" treat. If you follow my Suggestions, you can enjoy rhubarb up until autumn: 1) rhubarb loves water, so if you are not getting adequate rainfall, make sure you give it a drink. 2) a plant's sole purpose is to reproduce, and rhubarb is no exception. But once the seed pot sets, the plant diverts all of its energy to the seedpod, and the stalks wilt. Check the plant every single day and cut out all seed pods. Check. Every. Day . 3) Every other watering, give it a good dose of liquid fertilizer (miracle grow, etc). This will help it create more stalks, but can hasten it setting seedpods, so check. Every. Day! Those who grow to sell at farmers market could probably charge a premium for offering it "out of season". Hope this helps!
Yes, we have all been taught & conditioned to believe that those big leaves are poisonous; but just this year I gave it some serious consideration and came to the conclusion: BS!!! BS, those rhubarb leaves can NOT be poisonous and the rest of the plant edible. So I tried a big rhubarb leaf in my nightly salad. . . mmm mmm good! Great flavor and texture, give it a try but not too much as rhubarb is a very potent medicine too. Bless you all and keep seeking the Truth.
I am sure eating one leave won't hurt. My understanding is it depends on the amount of leaves you'd eat and your health condition. For instance, if you have kidney disease you have to be more careful regarding ingesting oxalic acid. It may also depend on how often you eat the leaves. I know with some mushrooms you can eat them many times and all of a sudden have an adverse reaction to the toxin.

I hope you still freeze a few stalks. It makes a delicious trivet for a pork roast. Best google Jamie Oliver and pork with rhubarb to see what I mean.
