    What I appreciate most is that you keep things as clean and organized as you can. I've worked in so many kitchens with so many slobs that just through stuff around all day long. I hate working around clutter or working around huge messes. I'm sure you know what I'm talking about.

      Keeps things clean? You should see the video where he dipped his hands into the nasty bucket of water to get a rag, then directly touched the lettuce and tomatoes with the same hand. Yeah, real clean.

      Had them like this at my former job (chorizo with hashbrowns and salsa). It would serve as both a breakfast and leftover lunch.

    Chef you are an absolute machine!!! There is no wasted movement in your workspace whatsoever. I had to do three months mess helper in the Navy. The way you cracked those eggs reminds me of PO Grayson. Once I learned how to crack eggs one handed without breaking the yolk I felt like I had some real skill 😆😆. Your videos make me hungry.

    I have tried real hard to be a line cook. But I couldn't handle a rush by myself. I was too focused and deliberate to keep up. But I loved trying. Thank you Cocinero

    I recently found your channel and have been watching your videos since. I truly enjoy watching you work. I used to run a fast food restaurant that would really get busy on peak hours/days and I appreciate the hustle I see from you so much.     Love watching your videos. You work so fast and keep a clean work area . Impressive. Quick question. Why do you use so much grease/melted butter? A whole ladle of grease for just a few eggs! Half a ladle of grease poured over a few onions and peppers (from a different video).

    Whos gets all this stuff ready before opening?The guy cooking or his helper.Seems every videos they never miss a thing.

      He did a video showing what he does before opening (just getting things fired up, cooking the breakfast sausages, making a batch of gravy)... But I'm pretty sure most of the prep is done the afternoon/night before.
      I don't know how many other kitchen staff there are throughout the day.

    In a separate garbage bin would you save the avocado shells, onion shells etc for compost? That's if you are thinking about making a garden at home.

      99 percent of workers/restaurants dont do this as they have a load of other things on their plate, also a lot of people dont have a garden at home

    I occasionally make about 3 breakfast burrito's at home and eat them throughout the week. I really focused in on how he rolls them and can't wait to try it next time I make some. Hopefully they won't end up on the floor. :)

    i usually have to do 3-4 hours alone on line. It is what it is. I kinda just go with the mentality they are on my time, I can go only as quick as I am.

    Excellent skills and organization. 17 minute burritos! Although they're dry (sin salsa, crema, queso o frijoles son burros gringos) I admire how many people you feed by yourself. Love your videos.

    I think you should get a food truck you would be successful, you just need to believe in your self and take the plunge, when I was 25 I owed 1.5 million on equipment and now 45 years later I owe nothing. So you can do it you have the skills.

    why don't you prep your omlette toppings? you stop everything to prep each order? thats kind of slowing everything down. also, who not have your scrambled and omlette eggs already scrambled. You have skills but its little things like that that slow you down
