From what I've seen in most of these street food videos, they tend to pile on the veggies, eggs, and sauces and go light on the meats. I'm sure it's all about the profit margin. The food still all looks delicious though.

i think i just discovered my favorite korean toast combo. ive seen it before with that egg omelette, ham sugar ketchup but with this goey cheese(?) and shrimp it looks a thousand times better wow it must be delicious!!

To me,it would be best with just the toast,cheese,and shrimp. No ketchup and sugar or anything else. Just toast cheese And shrimp.
I would diced the Shrimp and add it with the mix of foods if I was cooking it

Какая роль отведена сахару в сендвиче? Уже не раз видела эти "соленые" тосты с сахаром и никак не могу понять, зачем он там? Тем более, что посыпают и без того сладкий кетчуп. Неужели так вкуснее?
Корейский тост всегда добавлял сахар.

Why the sugar and ketchup tho
Lots of people like ketchup with eggs on food. Its common depending on where you live. As for the sugar in some cultures sugar and eggs are as natural as salt and eggs are for the west. For example the japanese make a dish called tamagoyaki that is effectively eggs, milk and sugar. Anyway I would guess the yellow liquid is garlic butter and the white "Goo" as someone else put it is cheese that's heated enough to be malleable and soft then stirred to give it a thick but soft texture. Likely either mozzarella or provolone based on the consistency.

Lots of Eggs, Cheese and a Hint of Shrimp Toast...C'mon!!!! Don't skimp on the MAIN ingredient of this fast food!!!!!! "Where's the shrimp??"
