    Thanksgiving may be over, but we have so many other holidays still coming up! What better way to serve up some fun than to make a garlic dip that everyone would enjoy! Who doesn't like garlic, right? Better yet, who doesn't like another Greek recipe!
    Skordalia is a Greek garlic dip that never disappoints. Skorda is Greek for garlic if you didn't know :) Traditionally, skordalia is puréed with potatoes as the base, but I like to make it with bread, and nuts for the added texture.
    The potato version is very smooth, but for me, it's more like garlicky mashed potatoes and not a dip. Plus, it saves SO much time not using the potatoes. Save those for another dish!
    Skordalia is typically paired with fried fish or boiled beets, but that's not my favorite. I love using this dip in a nice platter filled with chips and veggies. It also works great as a spread on your bread.
    This recipe is a one bowl (food processor) recipe so it's super quick and easy and makes for a great cleanup. We're going to let our food processors do the work here and just adjust the olive oil / club soda to get the desired consistency. This dip will thicken up over time so if you're making this ahead of time just add more olive oil before serving.
    SKORDALIA (GARLIC DIP)
    YIELD
    Serves 4-6
    INGREDIENTS
    6 Slices of Plain White Bread, crusts removed
    6 Garlic Cloves (I used way more...its a GARLIC dip!)
    1 cup Walnuts, finely chopped
    4 Tbsp. EVOO
    2 Tbsp. Lemon Juice or Red Wine Vinegar (I used Lemon Juice)
    4 - 6 oz. Club Soda
    INSTRUCTIONS
    1. Remove the crusts from the bread and lightly soak in water. Squeeze excess water out from the bread.
    2. In a food processor, add bread, garlic, chopped walnuts, vinegar, and half of the olive oil.
    3. With the food processor running, slowly add the remaining olive oil, and drizzle in the club soda until the mixture becomes smooth. Adjust the amount of soda, depending on your preferred thickness and type of the bread used. (Start slow! You can always add more :) )
    4. Transfer to a bowl to serve and drizzle the top with olive oil.
    5. Enjoy!
