Hum log brown ya green chana is tarah banate hain - green chillies, ginger, garlic (green garlic if available), a few leaves of mint or pudina, curry leaves, fresh coriander leaves, whole jeera raw, these are pounded together or coarsely ground in a mixer. If you have jeera goli at home, add 5-6 of them and grind the mix. We use groundnut oil for tadka with bareek rai, hing, curry leaves and slit spicy green chillies as per taste. Add the green paste & saute on low flame for a minute. Add the boiled chana after draining the water. Add salt, turmeric powder, a little dhaniya-jeera powder, red chilly powder. Mix well. If you haven't added any jeera goli, then add amchur, chat masala & a little pepper powder. Sprinkle some water if required. Cover and cook on low flame for 2-5 minutes making sure the gravy does not stick to the bottom of the pan. If needed, add some water to blend everything together. The gravy should be very thick and the prominent taste should be of the pounded green mixture. Add a tbsp of grated fresh coconut or desiccated coconut. Mix well. Add one third of a tbsp of powdered cinnamon+cloves+1 green cardamom at the end. Mix and put off gas. Cover & rest it for 5 minutes. Add thickly grated fresh ginger (optional), lemon juice and lots of chopped fresh coriander before serving,
