I like my farmer where I buy by the cut, cows raised same as yours. Aged ribeyes or New York strips are $11.50 lb and hamburger patties are $7.25 lb. No hang weight, package weight. Cows slaughtered on a monthly basis.
Good question! We have multiple places to put some, but I’d guess you might ask or be sharing with friends and fam. We bought a generator on wheels. Compact, but will keep that freezer going if we lose electricity. Check on your freezer frequently, even when the electricity is pumping, just in case.
There are a couple things you could do. I keep pickling salt in air-tight jars just in case the hydro goes out and doesn't come back on. Salt cured is one thing. That's still done to make prosciutto, basturma and jerky. Canning can be done if you have a heat source just as a propane BBQ, wood fire.

Do you ship out to different states .
If you pay someone to pick it up ant drive it to you
Does that price include the cost of butchering?
Question: What to do with the beef if the electricity goes?
Pressure canning
Make jerky out of much of it before that happens!
Feed it to your cats/dogs, and then eat them
