Those are Asian eggplants right? Why did you use the other kind? I love fried eggplant. I peel and cut them in inch size circles and then 1 inch sticks. I let my eggplant soak over night in salt water, cover in egg wash and dip in Dixie Fry coating and fry in electric skillet for even cooking. Need to figure out using Dixie Fry, no oil and PowerXL air fryer grill combo. Delicious.
