I have been making Chili for 60+ years and I find this an inteteresting version of classic chili. I plan on making this next weekend. The only thing I will change is after the meats are browned I will combine them and add a small can of tomato paste, turn up the heat a bit and stir everything together until the paste starts to brown, the aroma develops quickly, then add my liquid and the rest of the ingredients. I use this procedure with any meat/tomato receipe.

APCO we get here in Dallas is excellent Chorizo Apco pork chorizo sausage is made from a recipe that's over 100 years old. Oh yes please do add beer. That with some Mexican Cornbread Yummy Yummy. I would put the short ribs on the top rack when I was smoking chicken and then overnight in the fridge for the chili the next day. The smoking adds another layer.
I’m going to make this for our friends 25 anniversary. We were asked to make a chili. This might don’t tell my wife might be a tad better. She makes an amazing chili so we will see.

Mike, your chili looks so good I thought I'd give it a try. I already have a pretty awesome chili recipe that uses no tomatoes, but your choice of chorizo and short ribs opened up a new world for me. I wasn't able to find the boneless ones, but I got a package of regular, on-bone short ribs, which I removed the meat, but will add the bones to slow cook with the chili for added flavor. I've tweaked your recipe a tad: I used a green pepper instead of jalapenos, and chopped 2 chocolate naga brain peppers from the garden, 2 bay leaves, a dash of smoked paprika, 2 12oz bottles of Modelo Negra instead of broth, 3 beef bouillon cubes and a drizzle of molasses for a tinge of sweet. I only used 2 15oz cans of fire roasted tomatoes instead of 3 because I want to see how it will come out with only 2 cans. I also use Maseca corn flour to thicken. I have this pot of magic elixir going to slow cook all night in the crock pot. Tomorrow I'll give it a taste. 👍
I.ve never thought to use chorizo in chili. I'll have to try this. BTW, bacon is an awesome addition to a beef based chili. Add in 4 oz. including the fat to every pound of beef and maybe even a bit more depending on your preference. I cant wait to see if the chorizo is even better.

LOL, he has other chili recipes that match your suggestions. This guy can really cook. He does some cajun food and instead of murdering the recipe like a lot of them do, he's spot on. You really can't go wrong with his methods and recipes.
