KOLT a wood plank smelts (cooks) 1.5 items. So if you convert 1 log to 4 wooden planks you can smelt/cook 6 items. (It would be better to use 2 planks and 3 logs to make 3 charcoal). Sticks on the other hand come close to 1 item smelted / cooked.

They have played so many of these maps and still cannot remember to cover the water to keep it from freezing. I would like to see how long they would survive playing an ex nihilo sky block map.

You should always make bridges to the other islands out of lower-half slabs. That way you don't need to waste torches on them. And what sort of noobs don't know that it takes four dark oak saplings to grow anything? Seriously, that is amazing that you didn't know that.
