Because choreos aren't truly symmetrical, brain halves have a different function and affect how we use our limbs. The dance is choreographed just how we're supposed to dance it. The presentation in the game is mirrored to make copying the moves easier, since we're used to looking at ourselves in the mirror but not in a double-mirror or camera screen.
But the presentation still has to not look too weird on its own, this means a lot of styling cues have to be mirrored, such as clothing button positions and hairdo. An undercut hair style like this, you're used to seeing it left sided on other people. So they make it right side undercut instead.
