some of my fondest memories are of walking the streets of Thailand and trying the street foods. It didn't matter if I didn't know what it was, if it looked good and smelled good it would be good. All for the price of a 10 bot coin. I miss those days, I wish we had that here. Also yes, I know this is in Korea. It just touched those memories in me.
What kind of oil is in the fryers. Changed out daily is not heard of here in the states. Awesome stuff. Foil lined boxes too. I think plastic is poison and glad to see they use metal.

The chicken is removed after the first frying in order to allow the oil temperature to recover, since the temperature drops when the chicken is added to it. Frying longer at the lower temperature would result in the chicken absorbing more oil and becoming tough. Once the oil temperature has risen back up, the second frying quickly finishes crisping up the chicken without overcooking.
They're only putting that much in for the cameras, otherwise it's just a regular portion. I mean if they wanted to give bigger portions, why not just buy bigger boxes lol
