While I am not sure how the machine is fed, you can see that the potato is stuck on top of a steel rod and peeled by a blade on each side. Next to it the same contraption is seen many times, so I assume, yes it can do at least a dozen at a time and is even supposed to, as all the blades are attached to one bar and move, even if there is no potato attached. Also, what someone else said is important. A machine, even if it was slower than you, does not have to sleep or have an hourly wage. I can not speak of other countries, but here in Germany, just an educated guess from what I can see, I don't think a month of continuous operation of this machine would cost even 15% of an employee's wage. Finally, I can see two extra potential selling points or general points of interest: continuity and aesthetics. These apparently spring pressured blades are extremely consistent with the depth of the cut. This has two added bonuses of the peeled potato being visually pleasing and the waste in the form of pulp beneath the skin.
