You'll need to pick a team that doesn't use a DH so any of the Central League teams will do. For the starting exhibition games where you're playing to make a spot of the first team I don't think you get a chance to bat, at least I only remember pitching. But once you're into the season you should be getting at bats.
I think you can only use players created in Spirits mode or the high school mode unfortunately. I just tried making a new player in Star Player, saved, and checked the awakening screen but they don't show up.
You need to buy their awakened level from the shop after awakening them, then select them from your original player creations when starting a new game. For a visual guide it's the second half of this video.
