Mexican week was so frustrating as a Mexican. It made me realize that past episodes that I enjoyed, like Japanese week, probably annoyed Japanese people.
No, it wasn’t Joel and Matt dressing in sombreros. That was goofy and fun. It was Paul’s dumb*ss saying stuff that was blatantly not true.
They have very little exposure to Mexican cuisine and stuff. Yeah, I agree with you. It's kind of sad they're missing out on a lot of good food!
Paul Hollywood took a vacation to Mexico and decided he was now an expert on mexican cuisine. that's not actually a joke.
The mispronunciation bothered me sooo much. Like, I kinda get them not knowing how to make Mexican food properly because of their geography, but it takes literally seconds to look up how to pronounce things like "gallo." And I'm making fun of the hosts/judges, not the contestants, who we can give more of a pass bc they're crazy busy trying to juggle jobs and creating and practicing recipes.

The tortilla rule is probably for people who cook their tortillas on a higher heat. I've always been told to have it on med-high/high to cook them. Id burn them at 2 mins bc they are done in 30 seconds per side or less once the pan is hot enough.
I crank that mf thang on high heat, I cannot be bothered to wait and just flip every other time while taking stuff out for said tortilla
And I either get a nice lil golden lines running through the tortilla or I let her get some burn spots cause that mf crunchiness goes hard 😤

Chemistry wasn’t required in my high school in Canada. It was only an elective starting in grade 11 (is that junior in the US?).
We just had general science as a mandatory class in 9&10th grade and we never got through all the subjects we were supposed to cover😅

I actually wonder if the humidity of being in the tent outside in Britain changes the results of anything. I know that when some of the contestants come into the tent it's completely different than cooking in their homes (obviously different ovens and such) but I feel like the humidity/temperature would be a factor.

It is! It has ruined many a dish. I am in Florida and have to adjust recipes according to my humidity

The heat was 100% not hot enough to properly cook the tortillas. They were so pale and it should brown in very short time. While some type of flame/grill is best a really hot cast iron pan is an good option too.
Yeah all those tortillas looked terrible. I was a bit surprised by that. Cast iron is fantastic, I got to say, I usually cook a tortilla right on the burner (gas). Easiest way for me, especially for small tortillas and you can just flip with your hand.
Also is it just me or were they using a wheat/corn flour blend? They look like the awful mixed tortillas you find at supermarkets in like Canada

The only part of this to which I object is that they selected 2 minutes over 1 minute for the tortillas. Typically tortillas are cooked at higher than medium heat, which would likely yield you something like big corn cracker if you went with 2 minutes on each side.

To give GBBO some credit, I think the hydration quote is more in comparison to a bread dough rather than compared to other pizza doughs. I have no defense for the Mexican episode though and I was cringing watching it as well
The hydration theory from TGBBO is pretty weird when heat is what speeds up the rise. Typically, instant yeast dies at 54 degrees C, so you can use water at 45 deg C along with just a tiny amount of sugar to kickstart the yeast and get a fast rise. Doesn't do anything for enzyme development though which just takes time.
i was confused at the 2 hours of rise-
when i make my pizza dough, i just use slightly above skin-temp water with the yeast and it's done within the hour

Fumbled the hydration one. 65% is high hydration for most pizzas. Most commercial pizzas sit around 55%.
I thought the point is that the myth said you need to OVER hydrate and compared it to a typical hydration pizza

So for caramel, my own personal experience is that the sugar won’t seize (crystallize like it did for them) if a) you have a perfectly clean pot b)you put the water in first and keep the sugar from the edge initially and c) you put a little salt in it. The salt makes a huge difference. I’ve yet to have a caramel seize since I switched to use unsalted butter and put the salt in with the water and the sugar 🤷♀️
While yes, you can make caramel with no crystals without corn syrup, the corn syrup makes it much easier since it’s actually chemically stopping crystal formation due to it’s different sugar type. It’s long glucose molecules get in the way of the sucrose trying to crystallize. Another thing that helps is “washing” the sides of your pot down with a wet pastry brush to help remove any stubborn sucrose crystals from becoming seed crystals. Also not stirring it after it begins to boil as the agitation can also cause crystallization.
this is because of how recrystalization works,you can actually drop a bit of sugar crystals into the caramel and cause it too the crystals grow from other crystals the edges are called nucleation sites,even a scratch in the pot can cause crystals to stick the the metal crystals and grow
@@13374me I am gonna be that put and say some folks like myself try to steer clear of nasty corn syrup and you also have plenty of folks allergic to corn syrup so learning to cook all natural caramel is a wonderful thing to do/learn regardless...
@@mercedesvelasquez8781 if you're allergic or don't want corn syrup go with agave because honey off the shelf actually contains corn syrup to stop it from crystalizing on the shelf when it dries out
@@Aaron-zu3xn that is why you do don't buy cheap honey. I buy organic slightly priced honey that does have tendency to crystallize and the only ingredient in the honey is honey.. that other crap honey has extra ingredients which is no good at all...

I love y'all, I really do, you've gotten me through some hard days and made me smile. That being said, those tortillas look stodgy af. They're supposed to bubble after being on the skillet for a few seconds and use a medium high heat. I spent a large amount of quarantine perfecting my tortilla game and I promise if they aren't inflating after a few seconds, something has gone wrong.

What's with the undercooking?
The tortillas looked outright colorless with no spotting. I know they made corn ones, but that doesn't seem right to me. The pizza dough had no browning or delicious crisp and crunch. Good pizza dough should have some blackening, IMO.
At least the cannolis looked cooked and sounded crunchy.

Living in London, my friends joked that I (and all Americans) don't understand Mexican food is NOT actually a human right, we have it in USA because we share a border with Mexico. I still on some level don't understand.

Corn syrup is an invert sugar. Using some invert sugar in a sugar/protein/heat candy mixture will help keep the sugar from crystallizing as you heat it. You won't always get crystallization without it, but it gives you more leeway.
I regularly make toffee to add to chocolate chip cookies and have also made marshmallow several times and have never had the sugar crystallize on me even though I don't use invert sugars
They tried to cook neopolitan style dough in a regular oven and are surprised that its wet and floppy 😶

The whole reason table sugar(sucrose) crystallizes when melting is that it's high purity of just sucrose which is glucose and fructose in a specific structure. This is how rock candy is made. Mix in any other sugar, like a spoonful of honey, corn syrup, etc and it won't crystallize as that's an impurity to the solid crystals. You can also just keep going and heat will break it down anyway. Up to you. Throwing it away is silly. Don't do that.
