  • In our new series, Manchester chefs share their secret and not-so-secret recipes for you to try at home. It shows how they make it look easy - and also just how much effort actually goes into their restaurant dishes every service. But this series aims to help all of us improve our culinary skills, using ingredients most of us already have or can easily get hold of. Even if you’re an absolute beginner, it’s a chance to learn the basics from the best in the business. The Manchester way is to do it yourself. So definitely do try this at home...

    Two mistakes,
    1) divide the pastry into two for top and bottom, rerolled pastry rends to stiffen up and can lead to pastry pulling in when baking.
    2) Never put hot filling into pie, always let it cool first

You're right, rerolled pastry shrinks when cooked - I found that out the hard way! And hot filling will make the bottom pastry soggy.

I 'm afraid I didn't find this to be a good video. You talk and act too fast and you can't see what's going on in the pan. This is probably because you can do this without thinking. Beginners need to see.

My mother made pies like this, on an old plate, nice to see it done, I'll give it a try, looks great , I'd serve with gravy too .I live in Texas now and of course there's nothing like this here, I'm from Blackley village originally.
