Ingredients:
For the marinade:
• 1 pound boneless mutton pieces (shoulder or leg)
• 1/2 cup yogurt

• 1 teaspoon garlic paste
• 1 teaspoon cumin powder
• 1 teaspoon coriander powder
• 1/2 teaspoon turmeric powder
• 1/2 teaspoon red chili powder
• Salt, to taste
For the sauce:
• 2 tablespoons ghee or oil
• 1 onion, chopped
• 2 cloves garlic, minced
• 1 inch ginger, chopped
• 1 tablespoon coriander powder
• 1 tablespoon cumin powder
• 1/2 teaspoon turmeric powder
• 1/2 teaspoon red chili powder
• 1/2 teaspoon garam masala powder
• 1/2 teaspoon salt
• 2 tablespoons tomato puree
• 1 cup heavy cream or coconut cream
• 2 tablespoons chopped cilantro (optional)
• 1 tablespoon chopped almonds or pistachios (optional)
Instructions:
1. Marinate mutton for 30 minutes to 2 hours.
2. Heat ghee or oil in a large pan over medium heat. Add onion, garlic, and ginger. Cook until onion is golden brown.
3. Add coriander powder, cumin powder, turmeric powder, red chili powder, and garam masala powder. Cook for 1 minute.
4. Add marinated mutton and cook until browned.
5. Add tomato puree and cook for 2-3 minutes.
6. Add heavy cream or coconut cream and bring to a simmer.
7. Reduce heat to low and cook, covered, for 1-2 hours or until mutton is tender.
8. Season with salt and garnish with cilantro and nuts (if using).
9. Serve hot with basmati rice, naan, or roti.
