Have you done a soil test? Lime and fertilizer to soil test results will make amazing grass. Your pasture looks to already have established grass that needs to be fed. Also giving the grass a long rest period is very important. I am starting to improve the fields. I have thought about cover crop seed but didn't buy any. We have an abundance of grass for now.
Having too much grass is a good thing! I get excited whenever I see other farmers fields looking like that. Too many cow fields around me are grazed to the ground full of ironweed & multi flora rose. Curious to follow how yours turn out. I always graze it then mow off the seed heads so I’m curious what the benefits or drawbacks could be to mowing then grazing. I’m mowing with a belly mower on my Kubota so it’s only 6-8 inches high I feel like it cuts too much grass off mowing before but maybe 🤔 I’m wrong.
Normally, I would do the same as you, mow after it's grazed in order to keep the weeds down. I'll probably mow this again after I run the cows through it. We've had a pretty good year, so far, with rain and pasture growth, so I've been kicking around the idea of starting over with this field and replanting it for hay production. I figure that a good year like this is the best time to do something like that because I don't really need the grass right now, but I'm not sure just yet.

Yes, I put on 2.5 tons of lime per acre in October. I am planning to do another test this fall and see where things are.
