    Even through I don't have a homestead or a garden or a pantry and I've never home canned anything in my life, I'm joining the 2024 Three Rivers Challenge hosted by ‪@threerivershomestead‬
    In this video, I explain why I'm joining the pantry challenge and what I hope to achieve by participating. I also show you the disaster that is my freezer and my "pantry."
    Join me in saving money, avoiding food waste, and gaining new life skills. Have a good laugh every week as I stumble through the challenge. Share the highs and the lows with me. It's bound to be a bumpy ride. :)

    I'm glad I'm not the only non-homesteader doing the challenge. Yeah!! It's amazing how much food we can stockpile in an apartment. 😊

    Good for you! I’m in the heart of Dallas/Fort Worth. I do her pantry challenge every year for the past 4 years. I learn something every year about the food in my house. I save 2 months worth of grocery budget. I go hard core and don’t spend anything at the grocery store.

    New subscriber. I am also doing the challenge, because I too have so much food I need to cook and to save some money as well. My husband wants to buy us a new bed so I made deal with him, two month pantry challenge for a new bed and he agreed. So I'm looking forward to it. I am a gardener and I have frozen, dehydrated, freeze dried and canned everything so my pantry is full, thank the Lord. I will not waste anything. I live in a small town with a garden spot not on a homestead but I make the most of what I have. You must learn to can, it very rewarding. Have a nice day new friend.

    O, your pork shanks and dried beans would make a great cassoulet in a slow cooker. Like you, I’m not a homesteader so looking to use all the odd bits in my cupboards, freezer and fridge. I also live alone and an attorney so like to have stuff ready to eat very soon on getting home after a long day in court. Love your videos and look forward to sharing your journey from the UK

    I just did my inventory for the three rivers challenge. It's shocking how much food a small household can accumulate (it's not just the big families ). I hope to do the challenge twice this year to get a better grasp of what and how much we actually need to keep stock of in the pantry. Can't wait to follow.

    Thank you for sharing this I have been watching three Rivers challenge for two years now . I live in the city urban area as well and I am trying my best like you to use up what’s in my freezer pantry and stop the food waste.

      Suggestion, check brown rice & nuts. They will go rancid before other stuff.

    I didn’t know about this challenge but I’ve been doing it for the last few weeks just trying to not be wasteful. I laughed so hard halfway through this video seeing all the things you had in your cabinets. It reminded me of my own. You got all the good stuff to make some really good, wholesome meals.     This is so funny! I swear our pantries are related! I have all these same type pastas, flours, misc baking ingredients etc. "Weird and different" stuff. I'm all in that life!

    I just watched the video about this challenge on the Three Rivers channel and yours came up as a recommended one to watch and I’m so glad it did. You honestly sound so much like me 😂 I have great ambitions but don’t always master getting them to fruition 🤣 I’m hoping to join in with this challenge next year, I’ve only just learnt about it so want to plan for it rather than jump in although I probably could survive easily if I did do it now. I’m determined to start canning this year as I bought all the equipment months ago and just keep watching videos about doing it 😂

    I don't have homestead. Just shop at fruit stands and minimal gardening. I find all the goals interesting. Learned sourdough this year and find it's something I tolerate better.

    Hi. Just found you thru this challenge! You go girl! You will find lots of new things to love about your current pantry! I use farro n soups. The pastas you can toss with some garlic and veggies. So happy I found you!

    No homestead here up in Margate, Florida. I'm doing the January pantry/freezer challenge and a low spend month to use up what I got and to rotate stock. Plus, my goal is to pay off credit card debt and catch up from Christmas overspend. Also to use my new gym membership to build muscle and drop weight. Let's do this!

    Last year I made it only 1 1/2 weeks on the challenge. I had lots of partial meals. This year I can go the full 2 month's. I love
    canning my beans. Perfectly cooked and ready whenever I need them. My plan is to use the savings on more canning jars and expand my garden. I will pick up any meat or awesome sales and save it for later. I try only to buy things when it is on sale.

    Great idea pulling out the items that you want to definitely get through in this challenge. I can't wait to see what you do with all this stuff, especially the hearts of palm. I alllllmost bought some the other day to give it a shot. eta: That chickpea flour - perhaps you can try making tortillas with it. I've bought the Siete version in the store before, and it's really good. Tortillas really aren't that difficult to make. Time to Google! 😀

    Quinoa and farro are both great cooked in the instant pot. I like to add to a salad for lunch.

    Chickpea flour is so good for pancakes, waffles or crepes. No eggs are necessary!
    Ham shanks and black beans stew are also a good choice!
    Sometimes I google random ingredients and get recipes for them online.

    Candace, I loved this video and want to encourage you. You have a treasure trove of ingredients. I haven't watched your latest video where I know you went to the grocery store, but hope you have some other ingredients that you do use and like. For quite a few of these ingredients, my recommendations is to mix them with other ones that you do like. For example, we have long loved brown rice. If you don't eat it, but do eat white rice, then use it. At the present time we rarely eat rice cooked ALONE. I mix 1 part rice to 1/2 part quinoa and cook it together. I have different flours that I mix for different recipes, and so on. Ditto with that red lentil macaroni or chickpea stuff. Cooking the beans up, repacking them into smaller quantities, putting it in the freezer, is great. Then you will just take it out and mix it with whatever else you want and have your meal. The rice/quinoa mix freezes beautifully too. Above all, though, my recommendation is to TAKE COPIOUS notes on what you cook, likes and dislikes, and what you will do differently. When I buy any food, I snap a picture of the receipt, and add it to my file. I can tell you exactly what I bought, when, and how much money I spend in a month and in a year. Above all, give yourself grace. You will have failures. You will have food you just don't like. Make a note of it, and then just don't buy it again.     Wow-you have a lot of food! 😂 I can’t wait to see what you do with it. I’d use the pork shank to flavor the beans-yum! My pantry issue is pasta-I have BAGS of elbow macaroni (why???) and BOXES of lasagna noodles. I’m gonna try to use those up.

    Same! 100% I inventoried my pantry yesterday and was amazed at all the quadruple packages of things I want to make but haven’t. Time to spend time getting creative in the kitchen.

    Hi Candace!
    I am also a city living girl doing that challenge. I do it every year since about a decade. I try to go two months without shopping for food because our pantry, fridge and freezer is packed full. It is way to easy do buy new food and put in front of perfectly fine in the cupboards and forget about what´s in the back. Like you I have packages of ingredience that looks fun in the store that I need to use up. I make our food from scratch (I don´t mean making all pasta, baking all bread or grinding our oats) nd we don´t eat out. I buy alot in bulk, look for special offers and pick stuff from the clearance section and I fill our food storage as if there would be a shortage. Tho during the pandemic shortages (food, toiletpaper aso) we where all set and could help family and friends.
    I do keep a tiny amount of money in my household budget for an ingredience that can´t be replaced or made without and some fresh greens after a few weeks of eating down our inventory. I live on the shore of the south west coast of Sweden and we don´t have a garden of our own but many friends and familymembers do and they chare what they grow with ur.
    I do can things like pickled cucumber, apple saus, jams, chutney and I pick berries and mushrooms.
    I am a strick vegetarian, leaning to vegan and my partner eat meat most days. We make semi separate meals for that reason. It can be a bolognaise with minced meat for him and a vegetarian version for me and then sallad and spagetti for us both. If I make a vegetarian soup he will eat that to.
    The best thing with a challange like this, besides taking care of all the food and saving money is that we never eat as good as during this period, we truely make an efford to make good food.

      I just watched the one where you cook collard greens : ) The town where I live in is our Collard/Kale Mecka and abot 95% of all commercial grown collard greens in Sweden are grown here. I love eating it and so do most people here. It´s so good, so healthy and so versatile. Anything one can do with rocket or spinage can be done with collard. Stew it, have in sallad, in soups, smoothies, pies, casserols, pasta aus aso.
      We even have a local collard dish in our "state" that everyone here has for Christmas dinner and it´s a bit similar to the one you made.

    Pam says- Hearts of palm pasta is nasty as a pasta, however it makes an excellent salad topper similar to bean sprouts in flavor. It goes well with italian, greek, or vinegrette dressing. Also, If it's just you that you are cooking for, I expect you to need way more than two months to go through those shelves of stuff. 😀 Good luck. 😎

    You are such a joy. Just ran upon this challenge and was checking out a few videos. I'm very impressed with your pantry. I'm not a canner and have a small pantry of store bought items... I should try to eat up. But think I will some how panic when it's depleted. lol. Just recently started making bread because I found a recipe that makes only 1 loaf (italian bread). But I also plan on going low carb soon too. I do use allulose for baking.. it's great. I'll be following.

    I am a City Girl too but a little ahead of you in that I do "Can" both fruits/veggies and meats. Your beans can be soaked and cooked the old fashioned way for now till you learn how to do "Canning" trust me once you learn you will not go back. Anyways Pinto beans can easily be turned in to Refried beans. Black Beans can be turned in to Bean Burgers. You may have to buy some supplements to go with those but give yourself some grace you are learning. I sadly have already failed the challenge and went over my budget but I am o.k. with that, this challenge makes you more mindful of what you have and to stop the impulse buying and stocking what you don't use. Today I pulled out some Brats from my deep freezer that have been in there at least 6 months, diced them up, fried and will be having them for several meals with home canned Sauerkraut. I also boiled up eggs and took 4 of them and turned them in to egg salad using mayo and mustard. I also had a bag of frozen Cheese Ravioli that had also been in the deep freezer over 6 months, cooked it, added tomato sauce and will freezer 3 of the 4 portions for meals later, same with the Brats. I bought a 30 pack of freezer trays at Sams ( actually have more than those but..) I make a batch meal and freeze them, it helps so much with the impulse fast food buying because I am not motivated to cook a meal but when they are in the deep freezer, pull out a tray and microwave dinner is ready in less than 5 minutes and it's all food I cooked and know what is in it.     Hi. I’m doing the pantry challenge too. Don’t have a big homestead but a suburban Minnesota huge summer garden. Don’t can but freeze berries and vegetables I grow. I have a pantry to rotate through so kind of like yours, eating the stuff set aside. Retired and 1 person here also.

      I have lots of spices and grains too. FYI. smell the brown rice and nuts. If real old May be rancid. Any new brown rice keeps very well in The freezer for years.
      Good luck with your challenge. I was looking for a small channel to follow along with.

    Sorry, one more comment. If you don't know about preserving in Mylar bags look that up. I also have a ton of food preserved that way. Things can last anywhere from 5 to 25 years depending on product. I have bunches of rice, pasta, beans, grains, sugar, oats etc in mylar bags. That way they won't be wasted due to long shelf life. I have 4 big food grade safe buckets I've stored them in. As a single person family it's near impossible to get through all our storage in time. Mylar bags aren't that expensive and you can seal them with a flat iron for hair. Another rabbit hole to go down 😂

    Hey girl! I love that you are doing the challenge! I live outside of Atlanta and only have 1/3 acre. I did grow tomatoes and peppers this past summer and I do some canning as a hobby. But I have lots in my pantry that’s from the grocery store. I am doing the challenge too because I want to use up what I have on hand. I also think this is a good exercise for anyone to see how we would do in case of a job loss or other natural event that might prevent us from getting groceries. I do enjoy watching all the homestead channels.

    I store my flours in the freezer, so they don't go rancid!

      Yes, Jiffy Cornbread mix and quinoa as much as you like it mixes very well.
