I’m a diabetic and my blood sugar has been in check since we started Keto again. I hope this is of help to you and your husband
I made this and it turned out amazing! I even infused my own olive oil with scallions. Next time, I will cut the recipe down to 1 zucchini, 1 yellow squash, and one red bell pepper. As is, it was way too much, lol. I had to cook it in three batches. I was able to share with two other households
3 batches? What type of pan? I was afraid that I didnt have room for all of the meat. Today I only used dinner sausage, but will use both next time. It'll just be extremely crowded next time.

Hi Ab. I tried this recipe last night and wanted to share my experience with you and your friends here. Unfortunately, I didnt have any shrimp, but I used jalepeno sausage. Next time I'll try to find that andouii(?) sausage at the store. I first marinaded the sausage in Old Bay cajun seasoning, which I always use for frying tilapia and shrimp. I set it aside as I chopped 1 zucchini, 1 squash, 1 red bell pepper, asparagus, and a red onion. When I threw the pieces in a bowl, I added some olive oil and approximately 1 more tbsp of Old Bay to help marinade the veggies as well. I'm one of those crazy women who loves "pretty food", so the color of the red onion added beauty to the other colors of food. When I first saw the blend of your bowl of veggies, the attraction of the colors is what inspired me to make this 😊. I then put the marinaded sausage in olive oil for only a few minutes, then added the veggies. I didnt have any infused oil either, so I added some water and a lid to help my veggies steam. I topped it w/ parsley for more beauty. When my husband came into the kitchen he asked "How long does this take?", so I told him to just give me 10-15 more minutes. When he was ready to serve himself, I liked his response..."Well, it looks good". He responded the same after he tasted it. When he found out that the full recipe is supposed to have shrimp, he told me "That s**t is good...I could only imagine how good it tastes with shrimp". I was so excited to satisfy him. We had leftovers and we plan on eating more today as well. I'm simply questioning what skillet to use. Next time I may have to fry the sausage & shrimp in the skillet w/olive oil, then transfer everything to a large pot w/ the veggies. I may even add an extra squash and 1 potato. I guess it would look similar to stew since I added water to steam. I never understood how your veggies got tender so quickly--especially the asparagus. If there's anything I'm doing differently next time, I'll be slicing my squash and zucchini thicker so that when I cut them in 4s, I dont have to worry about them getting mushy. That didnt stop us from eating, Ab. It was absolutely wonderful & I cant thank you enough. God bless you!

Growing up my mother would put sausage shrimp and veggies together instead of pasta or sometimes no shrimp and sometimes just Italian sausage and veggies because my stepdad is Italian it’s always been one of my favorite dishes ❤️ thank you for posting. Hi Ab. I tried this recipe last night and wanted to share my experience with you and your friends here. Unfortunately, I didnt have any shrimp, but I used jalepeno sausage. Next time I'll try to find that andouii(?) sausage at the store. I first marinaded the sausage in Old Bay cajun seasoning, which I always use for frying tilapia and shrimp. I set it aside as I chopped 1 zucchini, 1 squash, 1 red bell pepper, asparagus, and a red onion. When I threw the pieces in a bowl, I added some olive oil and approximately 1 more tbsp of Old Bay to help marinade the veggies as well. I'm one of those crazy women who loves "pretty food", so the color of the red onion added beauty to the other colors of food. When I first saw the blend of your bowl of veggies, the attraction of the colors is what inspired me to make this 😊. I then put the marinaded sausage in olive oil for only a few minutes, then added the veggies. I didnt have any infused oil either, so I added some water and a lid to help my veggies steam. I topped it w/ parsley for more beauty. When my husband came into the kitchen he asked "How long does this take?", so I told him to just give me 10-15 more minutes. When he was ready to serve himself, I liked his response..."Well, it looks good". He responded the same after he tasted it. When he found out that the full recipe is supposed to have shrimp, he told me "That s**t is good...I could only imagine how good it tastes with shrimp". I was so excited to satisfy him. We had leftovers and we plan on eating more today as well. I'm simply questioning what skillet to use. Next time I may have to fry the sausage & shrimp in the skillet w/olive oil, then transfer everything to a large pot w/ the veggies. I may even add an extra squash and 1 potato. I guess it would look similar to stew since I added water to steam. I never understood how your veggies got tender so quickly--especially the asparagus. If there's anything I'm doing differently next time, I'll be slicing my squash and zucchini thicker so that when I cut them in 4s, I dont have to worry about them getting mushy. That didnt stop us from eating, Ab. It was absolutely wonderful & I cant thank you enough. God bless you!

Finally someone that uses vegetables for pasta dishes! Growing up my mother would put sausage shrimp and veggies together instead of pasta or sometimes no shrimp and sometimes just Italian sausage and veggies because my stepdad is Italian it’s always been one of my favorite dishes ❤️ thank you for posting. Now I know I’m not crazy for loving it LOL
I made this last week and it was EVERYTHING!!!I got the chicken sausage at Costco and they were delicious. This is definitely a new dish on my menu... thanks A.B!!!!

I cook yellow squash, zucchini and sausage all the time but this time I added the shrimp, bell pepper and asparagus. Ummm, ummm, good. Thanks for the new idea.
