- I hear you loud and clear when you shout at me in the comments about "That's not a Philly Cheesesteak!". Well, today I'm making an authentic Philly Cheesesteak, and I've got an actual real deal Pat's King of Steaks cheesesteak sandwich straight from Philadelphia to compare it to!
I even bought a master case of the Amoroso Italian rolls to try and make my Blackstone cheesesteaks as authentic as possible. And I get it now... the rolls DO make a HUGE difference!
All 3 of the Blackstone Philly Cheesesteaks that I made were fantastic - the Pat's King of Steaks cheese steak, my replica of that one, and my version with all 3 cheeses and my favorite all purpose seasoning. You can't go wrong with these griddle cheesesteaks!
*Don't yell at me about not ordering the Whiz from Pat's... To be honest, I'm not a huge fan of Cheez Whiz, and technically, provolone was the first cheese to be used on a Philly decades ago.

I was born and raised in Philly and I say to make a cheesesteak any way you like, and enjoy it. I will say that you did make traditional Philly cheesesteak that you would find in any neighborhood hoagie shop decades ago. Especially the one with American cheese. Whiz is for tourists LOL! Things change and It’s getting harder to find a good traditional cheesesteak anymore, even in Philly. Believe it or not, ketchup is the most common condiment for a traditional cheesesteak. Try a squirt of ketchup before eating it if you ever make a traditional one again. As you discovered the roll does make the sandwich. That roll is also the key to making a good hoagie if you want to give that a try. Keep making great videos.
Nice video. I'm from Philly area and one thing I'd add is to hollow out the inside of the Amoroso roll. Steak places automatically do this when making a Cheesesteak.

Neil, here's a recommendation for you that adds a snap to a cheesesteak. Many Pizzaria's in Philly and South Jersey use Sharp Provolone on their steaks. You may have trouble finding it in East Tennessee but if you can, give it a try. Go Bucs!!!

In Philly we Dont eat Pats or Genos they are for tourist. But I appreciate your effort.
Great cheesesteaks! The difference in the roll shape is because Pat’s uses Liscio's rolls from New Jersey. Amoroso’s and Liscio’s are both equally good hoagie rolls. The reason I think everyone says Amoroso’s is because they advertise all over the place in Philly.
Since moving from South Jersey to Las Vegas almost 30 years ago, I've always found it difficult to find a good Philly cheesesteak. I finally found a place about 15 years ago and they use the Amoroso rolls. That is the key. Use whatever cheese you like, the roll makes it or breaks it. Now that I purchased a flat top, I'm going to try out my own Philly cheesesteaks, if my local place can sell me the rolls only.

We have been to Philadelphia and ate at “Sonny’s” , in my opinion the bread is not as “ breads. I live near San Francisco, CA and have access to really good sour dough rolls. I scoop out some of the bread, and it taste similar. They are all awesome.

Neal I went to a cheesesteak place once (not in Philly). They had one that was meat, onions, Provolone and Philly Cream cheese. It was called a "Philly Philly" and it is fantastic. If you see this comment and decide you want to try it be careful that effing cream cheese will Melt your face and it retains the heat for a long time.
I have a co worker that asked me to put cream cheese in it...I honestly couldn't tell if he was kidding or not...he swore by it..this is only the 2nd time hearing it...Yeah he was from there...I didnt want to do this and look like a fool...but I appreciate you mentioning this....I will try it

It took me, and a couple others, well over a year to get him to put down the Green Can of Death and switch to real Parmesan cheese instead. Now some of you got him into better sandwich rolls. Yay team!

Don't get me wrong, I like your videos and have faith in your abilities, I was expressing my dislike for Philly Cheesesteaks in general. I have had Pat's and Gino's and they are both nasty compared to a good cheesesteak made to right way with Provolone and not Cheese Wiz.
BUT thats what you like...thats not the holy grail be all way to make it...plenty of places other than those two offer it...im not a fan either...I like a mix...but provolone only is not for me...make what you like because you are the one eating eat...I say that all the time...this is no different..many ways to make

I had pats and genos on the same day when we visited. I liked pats cheesesteak better but genos fries better.
I did the same thing while i was seeing a Philly bb game. Had both Pat's and Geno's. Pats was better but I've had better cheesesteaks at other places
Thats what I have heard...Pats being the original most want to pay homage...but many other places like Jims or corner markets sever better...not the bodega but named something else
@The Flat Top King yes u are right. When we visited all the locals we talked to pretty much said those 2 places are just a tourist attraction and they don't go there. We had to try them just to say we did. I wasn't all that impressed honestly. Next time we go I do want to try the local favorites.

For me I’m all good until people start assigning the burnt end tag to anything but the point of a brisket. But these days I try and bite my tongue. You can put peppers on a cheesesteak but it’s actually not common in Philly but it definitely does exist. Some places in Philly have good quality house made hot peppers and it works.

I wish you guys would do this same level of comparison for the greatest sandwich of all, the Chicago Styled Italian Beef Sandwich, also know as the "Wedding Sandwich." I know it incorporates a pot. But that sandwich is off the chart better than the "Philly." BTW, this was one of your very best cook recipes.

Awesome video, I live in Philly, the key to making a Philly steak is shaved ribeye on a long, somewhat crusty sesame steak roll with Cooper sharp with long hots! That simple ! Tourists go to Genos and Pat's- its okay but there are so many places that do it better! It's like ordering from a Domino's in NY -technically it's a NY pizza because they are in NY but it's not really a NY pie
I want to try the Cooper Sharp...dont have that around here..plus I love the addition on the long hots...
Pat's was the originator of the Philly Cheese Steak but now is mostly a tourist destination. The current king of Cheese Steaks in Philly is Angelo's in south Philly. Look up Angelo's in youtube and study how the sandwich is made. Your cheese Steak may be tasty it's not a Philly Cheese Steak. The meat must be finelly chopped and well blended with cheese and fried onions. If you really want to kick it up add Longhot peppers or Banana peppers Cooper Sharp for cheese and a sesame seeded roll from South Philly.
I don’t know if you ever use other RUclips recipes , but Griddle Guys have a pretty good cheese sauce recipe . I know “not authentic “ but still very tasty !

And YOU HAVE TO TOAST THE BREAD…….. And the best cheesesteaks are not in Philly. They are made in your own backyard and local pizza places

Love that you responded to comments and made it as authentic as you can. I was born in Philly and visit yearly. My family likes Jim's Steaks and go there when we visit. I liked the rough chop of the onions like Jim's and my go-to is the whiz-wit. That being said, your 3 cheese version looked amazing. I agree that the roll makes a huge difference. Whenever we make cheese steaks at home, we continue to try to find something that compares (and haven't found the answer yet).

There are so many Griddle PHD's out there, sometimes it's hard to get through the smoke and really see the experts, you don't have that problem. Your versions are normally cranking the flavor and taste up from any baseline and one the average griddler can master very easily. You two keep doing what you are doing, unmatched.

There’s just one thing. If you want to duplicate a Pat’s steak, you never, ever chop it! The original is NOT chopped! I repeat, not chopped! It’s slices of rib eye. The cook at Pat’s will NoT chop, even by request. If he does he will be fired!!!!!
I live in Philly, ask any person who has the best cheesesteak and you will probably get a hundred different answers. Alost everyone makes them the same way. Yes the roll makes a difference and no self respecting sandwich shop put peppers on their steaks. Mushrooms in my opinion are okay. I like American cheese, fried onions on mine but to each his own. I'd say its still better made fresh off your own Flat top if you buy a ribeye roast and run some off on a meat slicer and experiment with different buns or Ciabatta buns VS paying $120 for 4 sandwiches from Pats... Could buy a nice ribeye roast for that.
Good move disposing of the Whizz. Cheese whiz is a by-product of the petroleum industry, made, in part, from the residue from refining oil.
This is like "fast food" vs fresh home made, there can be no comparison. And I'll take mine with green peppers, thanks!
I like Pat's better than Geno's. The wife and I went to Philadelphia's to try them. Philadelphians are haters when it comes to Pat's and Geno's though.
Authentic philly cheese steak eh? Pull it off the griddle and throw it in the garbage. Then make one with white cheese, peppers onions and mushrooms.
People make tacos the wrong way all the time and call them tacos so 🤷🏼♂️🤷🏼♂️ so Philly cheesesteak it is no matter what it has

My son and I went to Philadelphia in 2019 to see a concert at the Union Transfer and while there we asked the locals where was the best place to get a Cheesesteak. Nearly every one of them said to avoid Pats King of Steaks. We were very surprised to hear that. They called it a tourist trap. The one place that kept coming up in their recommendations was a place called Sonny's, so we went there. It was awesome. An added bonus was my son got chewed out by one of the cooks for sitting down to save a table before we had our food. LOL!!! It's kind of like the Soup Nazi from Seinfeld in there. You have to know what you want when you get to the window, they were very explicit about that.
WOW....crazy for some places like that for sure...do you remember how you actually ordered it and what they offered..
Next time in Philly you have to check out Jims on South street, Chubbys, Dalessandro's to name a few.
