Learning to be a barista in Melbourne can be tricky, you can start as a floor staff and ask to be train on coffee. Otherwise, go for courses from reputable coffee roasteries like ONA, ST. Volume metric doesn't reflect the actual amount of water goes through the puck, because the brew pressure and pressure in the puck cause resistance, that's why extraction varies from time to time.
Gloves are not efficient and not environmentally sustainable. Instead, we apply practices like regular hand washing (every one hour with a timer on) and using hand sanitiser whenever possible. We have more than 10 bottles of hand sanitiser placed in every corner of the shop.

Why do you tap the jugs/cups before and after you pour anything in them?
Hello! That is to pop any big or small bubbles present in the milk and espresso. It can ruin the latte art and the texture of the coffee itself :)
