We either add heat or remove heat from the building using refrigerants or with water-based systems like chilled water and heating hot water. You're right cooling is just the science of removing or moving heat from one medium to another. The heat is never lost, it's just moved from one location to another. The Bypass Factor represents the proportion of air that "bypasses" the cooling coil without being fully cooled or dehumidified. Essentially, it quantifies the efficiency of the coil in cooling all the air that passes through it.
