The Best, Creamy, Cheesy Baked Mac n Cheese Recipe | Pasta Recipe by Chef Amrita Raichand

    Look no further! In this easy-to-follow Recipe Video, I'll show you how to make a classic mac n cheese that's creamy, cheesy, and absolutely delicious.
    I've also shared my secret tips and tricks to create a delicious and creamy dish that will have your taste buds dancing.
    Mac & Cheese:
    For Boiling The Pasta-
    Ingredients:
    Macaroni - 1.5 cups
    Surplus water to boil
    Salt
    Oil- 1 tsp
    For The Cheese Sauce -
    Ingredients:-
    Whole milk- 2 cups
    Butter- 2 tbsp
    All purpose flour (maida) - 2 tbsp
    Dijon mustard paste - 1 tsp
    Cayenne pepper - ½ tsp
    Black pepper powder- ¼ tsp
    Nutmeg powder - a pinch
    Cheddar cheese (grated) - ½ cup
    Mozzarella cheese (grated)- ½ cup
    Parmesan cheese (grated) - ¼ cup
    Boiled pasta water- ¼ cup
    Method:-
    1. Cook the macaroni according to package instructions until it is a-dante (firm to the bite)(Do not over cook). Drain and drizzle oil on the pasta and keep aside.
    2. Preheat the oven to 180°©.
    3. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for a min till the raw smell of the flour disappears.
    4. Now add mustard paste along with cayenne, black pepper & nutmeg powder and give it a mix.
    5. Gradually whisk in the milk until you get smooth and lump-free sauce.
    6. Now switch off the flame and stir in the grated cheddar & mozzarella cheese & stir completely melted.
    7. Add the cooked macaroni to the cheese sauce and stir until well combined. Add a little pasta water & stir again.
    8. Now, pour the mixture into a baking dish, grate the parmesan cheese on top, bake in the preheated oven for 15-20 minutes, or until the top is golden brown crust.
    10. Once done take out from the oven and keep it on a cooling rack. Let it rest for 5-10 minutes before serving.
    Garnish with fresh chives or parsley & enjoy your delicious mac and cheese!

      Hey thanks so much. Garnish has been done with chives. You may use parsley if you chives are not available ❤

    Do you think pasta should be cooked 1-2 mins under before baking?

      Yes, do watch the video as I’ve categorically said that don’t over cook the pasta. It should be Al dente (still firm when you bite it) when you take it out of the water. When you add it to the sauce, again it’s barely cooked as the cheese is added after turning the flame off. And then it’s baked. Frankly baking is done more to get that crusty top and to intensify the flavours 😋❤

      ​@@Chef_Amrita_RaichandObviously you did. I mean in terms of time. Even I like when it has a bite. But I don't know how that ideal bite should feel like😂. So should I cook pasta 2 mins under the cooking time mentioned on the pasta packet?
      I cook pasta often, italian cuisine is by far my favourite. So I should know how to cook it properly I think😋🥹
