Watching these competitions, it is ovious that the dogs love it! I set up a course in my backyard for my 5-year old Australian Shepherd and she is kind of getting the hang of it, but she HATES IT! And because of that, I don´t really enjoy it much either.

That first girl looked really familiar. I googled her and it turns out she's the one who was on Britain's Got Talent with the dancing dog. Looks like dog training is still her thing!
You'd think with basically 100% of faults being contact points that trainers would have addressed that. It's the point of the obstacle. Maybe it's that it's the only obstacle which requires the dog to do something unnatural?
They do a large part or training is contact points. But occasionally the dogs will miss it due to excitement of competition or the owners pushing the dogs too fast to try and make the time.

In these type of competitions, have the dogs run over the course prior to competing?
No, the dogs don't know the course before they do their run. The humans get one practice run without their dog and a map of the course.
