Ari's gourmet Ramen dish looked really nice. The Chinese bacon and tofu dish looked unique. I have never seen that before. Maybe because my roots are more in Guangdong...Kaiping and Taishan areas to be exact. Anyway, the grand finale to a fireworks display is always the best. Hope it was a great 4th of July for all of you!
Southern Chinese also have smoked tofu but you probably don't recognize it. It's in the Asian markets in the same area as tofu and egg tofu section. Sometimes it's called tea infused or spiced tofu or five spice tofu in the south but it's usually the vacuum packed brown square or rectangle. You can't miss it. The salt and brine takes out all the moisture making it a much denser protein source hence why dad thinks it's similar to pork.
