Cooking Cuban - Sofrito (Cuban stir fry sauce)

- Sofrito is the base of many Cuban dishes. Depending where you are in the world, it is sold pre-made at the supermarket. However, if you happen to be somewhere it's not in stock, or prefer to make it fresh, this recipe will help you bring it to life!
Abuela and I show you step-by-step in this video how to make Cuban sofrito (stir fry sauce). Depending on how much you need for your dish, you can double up on the ingredients -- cook with feeling!

Instructions:
Step 1:
- Chop white onion. It can be diced or in slices, however you want. Put the onion in an oiled hot pan.
Step 2:
- While sautéing the onion, chop the bell pepper (you can use any color, the sweeter the pepper the sweeter the sauce may end up). Toss it in the pan.
Step 3:
- Cook down the onion and bell pepper until they are soft. Meanwhile, chop garlic.
Step 4:
Add the garlic to the pan once the onions and pepper are soft. Mix it up until the garlic is fragrant.
Step 5:
- Add tomato puree and some chopped tomatoes to the pan. Mix it up. Let it simmer for a bit so the flavors blend.
Step 6:
- Squeeze lime into the mixture and stir.
Step 7:
- The sofrito is ready for your Cuban dishes!

Paso 3:
- Sofríe la cebolla y el ají hasta que se suavizan. Mientras tanto, pica el ajo.
Paso 4:
- Agregue el ajo al sartén. Sofríe hasta que el ajo tenga un olor aromático.
Paso 5:
- Agrega el puré de tomate y mézclalo. Deja que se sofríe un ratito para que se unen los sabores.
Paso 6:
- Échale limón al sofrito y mézclalo.
Paso 7:
El sofrito ya está listo para usar en varias recetas diferentes!
